What it is
The Paraguayan take on tallarín is not al dente pasta with sauce on the side: the noodles are often cooked right in a thick sauce of free-range chicken or beef with onion, bell pepper and tomato, soaking up all its flavor. It is served in a deep bowl with grated cheese or queso Paraguay. Big-pot food for gatherings and weekend lunches.

Italian immigration in the late 19th and early 20th centuries popularized pasta, gnocchi, ravioli and pizza in Paraguay, and today they are everyday fare; tallarín con pollo is the most homespun version.
