Mosto helado
Freshly pressed sugarcane juice, served ice-cold at summer roadside stands.
What it is
Sugarcane stalks are crushed in a trapiche (cane press), and the greenish juice is strained, bottled and chilled in coolers packed with ice, never with ice added, so it isn’t watered down. It is sweet, refreshing and faintly grassy. It is sold by the bottle at roadside stands, especially between Ypané and Guarambaré in the Central department. Drink it the same day: it is a fresh product with no preservatives.

History
Sugarcane arrived with colonization and became central to the economy of towns such as Guarambaré, home to sugar mills. Mosto is the most direct way to enjoy it, before it becomes molasses, sugar or caña.
