Locro corn cooked until soft, served with dark cane molasses or milk.

What it is

Locro corn is soaked and cooked with ash lye to loosen the hulls, then rinsed and boiled for a long time until the kernels burst open and the liquid thickens. It is served warm or cold with dark cane molasses, with milk and sugar, or both. Simple, nourishing and very sweet when made with molasses: a dessert with country roots that still turns up at markets and fairs.

History

A dish of rural origin and high in energy, it is said to have fed soldiers on campaign. It uses the same locro corn as the stew of that name and the ancestral lye technique: water filtered through ash, which helps hull and soften the grain.
