Clericó
Well-chilled white wine with chopped fruit: the Christmas and New Year toast.
What it is
Seasonal fruit is chopped and left to steep in white wine, sometimes with a little sugar or juice, then served very cold from a pitcher with a ladle; the soaked fruit is eaten at the end. In Paraguay it is part of the year-end holidays, in the full heat of December, alongside sopa paraguaya, chipa guasu and watermelon. It goes down fast in the heat, so pace yourself.
