chipa so'o (so'o = carne)

Starch chipa stuffed with ground beef and egg: a full meal you can hold in one hand.

What it is

Balls of cassava-starch dough about the size of a large cookie are hollowed with the thumb and filled with seasoned beef and chopped hard-boiled egg before baking. The result is a roughly seven-centimeter round, firm outside and juicy in the middle. It is heartier than plain chipa and works as a quick lunch on a road trip or a substantial afternoon snack.

History

The name says it all: so'o means “meat” in Guaraní. It belongs to the chipa family, some seventy varieties born from the meeting of Guaraní cassava starch and the meat fillings that arrived with cattle.
