Reviro Festival
A reviro cook-off: the humble flour dish of the eastern yerba mate plantations, made by neighborhood committees.
What it is
Reviro is a dish of flour, water and fat, browned and crumbled in a pot, born in the camps of the mensú (the laborers of the yerba mate plantations) and well known in Alto Paraná, Itapúa and the Argentine province of Misiones. At its festival, committees from neighborhoods, churches and schools compete for prizes for community projects (₲10 million for first place in 2026), while the public tries reviro on its own or with cocido, meat or egg.
What to see and do
- Reviro from dozens of home cooks
- A cook-off benefiting neighborhood committees
- Cooking rooted in yerba mate country
Tips
Have your reviro with cocido quemado (yerba mate brewed with caramelized sugar), the way it’s eaten in the countryside. July is cool: a good time to explore the area around Ciudad del Este.
